    During the summer holidays, we always used to bake cookies with grandma. If it wasn’t healthy rusks, it was that crumbly crunchie recipe we all love so much. These classic crunchies are crumbly, crunchy and and don’t break off in your coffee like rusks do. Not only are the fun to bake, but they also make a great baked gift to your family and friends. You probably already have the ingredients, so it’s time to start baking.

    CLASSIC CRUNCHIES SUGGESTIONS

    Not only do you have all of the ingredients at home, but this simple recipe is great to make with the kids over the summer holidays. The syrup is sweet and keeps the mixture together and if you like a chewy cookie, just bake it for a bit less time. When they’re ready to be turned down in the oven, sprinkle them with some more coconut. They’re ready in about 30 minutes but let them cool and enjoy with coffee, tea or even as a midnight snack.

    Classic crunchies recipe

    INGREDIENTS

    • 200 g butter

    • 1 tbsp golden syrup (or honey)

    • cups oats

    • 1 cup coconut

    • 1 cup flour

    • 3/4 cup brown sugar

    • 1 tsp bicarb

    METHOD

    • Pre-heat the oven to 180°C.
    • Mix the flour, oats and coconut in a bowl.
    • Melt the butter, syrup and sugar in a small pot.
    • When the butter starts to bubble add the bicarb and stir. Remove from the heat immediately.
    • Pour the butter mixture into the dry ingredients and mix with a spatula.
    • Using the back of a metal spoon, gently press the mixture into a greased baking tray (30cm x 20cm or similar depending on how thick you like the crunchies).
    • Bake for 15 minutes at 180°C, then turn the oven down to 160 C and bake for a further 10 minutes until golden brown.
