KeymasterOKLAHOMA SOONER NUT CANDIES
*Ingredients list:
°1 cup granulated sugar.
°1 cup brown sugar.
°1 cup light corn syrup.
°1/2 cup. Unsalted butter.
°1 cup. Heavy cream.
°1 teaspoon of vanilla extract.
°2 cups. Mixed nuts (almonds, peanuts, cashews, pecans)

°Sea salt (optional, for sprinkling).
*to prepare:
The first step
Line or grease a baking tray with parchment paper or butter. Keep it in a safe place for later.
The second phase
Combine granulated sugar, brown sugar, light corn syrup, and unsalted butter in a large saucepan. Stirring constantly, melt the butter and dissolve the sugar in the saucepan over medium heat.
third level
Stirring constantly, gradually add the heavy cream. The mixture may boil and splash, so be careful.
The fourth step
Cook the mixture, stirring regularly, until a candy thermometer registers 115°C, which should take about 10 minutes over medium heat. The softball stage, during which the candy acquires its chewable quality, has arrived. The batter can be cooked up to 121°C for a stronger consistency.
Fifth step
When the mixture has come to a simmer, remove the pan from the heat. Add the vanilla extract well.
Sixth step
Add the nuts to the caramel mixture and stir until all the nuts are evenly coated. Spread the caramelized nuts in a single layer on the baking sheet. If you want to improve the taste, put a little sea salt on top.
Step seven
Let the coconut cool to room temperature. The caramel will harden this way. The candies should be broken into small pieces or cut into small squares with a sharp knife after they have cooled and hardened.
Eighth stage
Store Oklahoma Sooner Nut Candy in an airtight container at room temperature. They are good right away or can be kept for a few days.
