First, turning on your oven also let it heat up to 350.
Then take the coconut and spread it literally on a baking sheet. Put it in the oven and cook it, taking it out from time to time to stir this. Do this until coconut becomes a golden brown, but not burned, usually 5 minutes.

Add about ¾ cup of toasted coconut with the extract. Keep the remaining coconut on the side to create a pie filling for this.
Putting filling in pie shell you have. then put it in the refrigerator and let it rest until it cools completely, usually about 4 hours.
Put the rest of the coconut you reserved on top of this, and also add a little whipped topping on top of this. Serve!
