°1 cup sweetened coconut flakes

°3 cups half and half

°2 eggs, beaten

°3/4 cup white sugar

°1/2 cup all-purpose flour

°1/4 tsp salt

°1 teaspoon vanilla extract

°1-inch (9-inch) baked pie shell

°1 c frozen whipped topping,


First, turning on your oven also let it heat up to 350.

Then take the coconut and spread it literally on a baking sheet. Put it in the oven and cook it, taking it out from time to time to stir this. Do this until coconut becomes a golden brown, but not burned, usually 5 minutes.

Take a pan, and from there, mix the sugar, half and half, eggs, flour and salt, put everything in the pan, mixing it until completely incorporated.

Boil, then push over low heat, then let it rest to cook, stirring occasionally. Cook this while stirring all the time for the next two minutes. Removing pan from heat.

Add about ¾ cup of toasted coconut with the extract. Keep the remaining coconut on the side to create a pie filling for this.

Putting filling in pie shell you have. then put it in the refrigerator and let it rest until it cools completely, usually about 4 hours.

Put the rest of the coconut you reserved on top of this, and also add a little whipped topping on top of this. Serve!
