    The best part is that this pineapple fridge tart requires no baking or cooking. With a clever combination of tasty ingredients, you can whip together this dessert in almost no time.
    The crust is a simple combination of crushed tennis biscuits and melted butter, whereas the filling ingredients are combined to form a soft, velvety filling poured into the crust.
    After preparing this fridge tart, simply pop it into the fridge to set for at least three hours or overnight. This is where you will have to exercise a bit of patience and willpower not to try a bite or two prematurely.

    Pineapple fridge tart recipe

    INGREDIENTS

    • Crust
    • 1 packet of tennis biscuits, crushed

    • 100 g butter, melted

    • Filling
    • 1 tin condensed milk

    • 125 ml lemon juice

    • 1 tin (400 g) crushed pineapple, well-drained

    • 300 ml cream, whipped until thick

    METHOD
    • Crust
    • Crush the biscuits or whiz them in a food processor until broken. Add the melted butter and blend very briefly until just mixed through.
    • Scrape the mixture into a prepared dish and spread out. Work the crumbs up the sides of the dish and flatten with the back of a tablespoon.
    • Put in the freezer for 10 – 15 minutes to firm while you prepare the filling.
    • Filling
    • Mix the condensed milk and pineapple.
    • Add the lemon juice.
    • Fold in the cream.
    • Pour over the crust and decorate with pieces of fine tennis biscuits or pineapple pieces.
    • Put in the fridge for at least three hours or overnight.
